Green beans are commonly referred to as “string beans” because of the long fibrous stem that runs around the outside of the bean, or “snap beans” because of the loud SNAP noice they make when they are opened. They are essentially young kidney beans that have been collected before their pods become too fibrous to consume. These beans are rich source of vitamins A, C, and K, and of folic acid and fiber making them high value target in the global market.
